From The Recipe Book – Steve Grove’s Muffins

STEVE GROVE’S BRAN MUFFINS  (Chinese Fighting Muffins)


8 Eggs
24 oz of frozen cranberry or apple juice concentrate
4 cups of mixed berries
2 cups of plain yogurt
1/2 cup of cottage cheese
1 cup of almond or regular milk
3 cups of whole wheat flour
1 cup of canola oil
1 stick of real butter
2 cups of Quaker Old Fashioned oats
1 cup of bran
1/2 cup of Quick Cream of Wheat
1/2 teaspoon of Salt
1 teaspoon of baking soda
1 cup almond slivers
1 cup of walnuts
1 cup of golden raisins
1 1/2 cups of prunes


Mix all ingredients together well. Spray muffin pan with non-stick cooking spray or use muffin liners in pan. Pour in mixture until each muffin tin is about 3/4 full of the mixture. Bake at 350 degrees until golden brown, normally about 40 minutes.
